Ingredients You'll Need

1 cup all purpose flour (you can sub and use almond/oat flour)
3/4 cup whole-wheat flour
1/4 cup Splenda or Stevia
1/4 cup packed dark brown sugar
1 tbsp baking powder
1/2 tsp salt
1 1/4 cups fat-free milk, or nut milk
1/3 cup all-natural peanut butter
1/4 cup egg whites
2 tbsp melted coconut oil
1 tsp vanilla extract
1/4 cup sugar-free strawberry jam


Directions

Combine flours, sweetener, baking powder, and salt in a large bowl; stir with whisk


Add remaining ingredients except jam, stir until moist


Coat muffin pan with cooking spray


Spoon batter into each cup about half full


Spoon 1 tsp jam into center of batter, then spoon remaining batter on top to cover jam


Bake at 400 degrees for 20 minutes, or until muffins spring back when touched lightly in center


Let cool pan in for 5 minutes
