Why I Love This Recipe

I ate this delicious pie at a roadside cafe outside of Benton, Arkansas, The cafe is called Ed & Kay's. They are famous for their pies. You can actually type in Ed and Kay's cafe, benton arkansas, in your search engine and find photos of their pies including this one. Now I did not get a recipe from anyone, so I have experimented until I came up with this recipe. It is as close as they come to the pie I ate years ago. Now mind you, it needs to come with warning labels for sugar overload, diabetic coma, and better than drugs addictions.


Ingredients You'll Need

3 eggs
2/3 cup karo or corn syrup
1 cup sugar
2 tbls butter
1 cup chopped pecans
1 small can crushed pineapple (drained)
1 cup angel flake coconut
1/2 cup buttermilk
1 tsp vanilla
a pinch of salt
1 uncooked pie shell (I used a deep dish pie plate for baking)


Directions

Combine eggs, karo, sugar, and butter together. Beat with a wisk until fluffly and bits of butter are floating on top of mixture. Wisk in remaining ingredients and pour into pie shell. Bake at 350 for 45 min-1 hr. and golden brown on top.
