POTS DE CREME DAIRY FREE

Pots de crème are the perfect dessert for an elegant dinner party. I was given some Wedgewood demi tasse cups from England a number of years ago and while we rarely drink espresso, the cups are wonderful for serving this delicious dessert. .
Ingredients You'll Need
2- 5 oz. bars of high quality dark chocolate
1 can of full fat coconut milk + either coconut or almond dairy free milk to equal 3 cups
5 egg yolks
If the chocolate by itself is not sweet enough to your taste for this dessert add ¼ c. sugar
2 t. vanilla
1/8 t. freshly ground sea salt
1 can of Coco Lopez Cream of Coconut, chilled and whipped for topping (optional)
Directions
Chop up the chocolate and set aside. Place the coconut milk and additional coconut or almond milk in a saucepan. Stir in egg yolks, sugar (if using), and salt. Turn heat to medium and cook, stirring constantly until it begins to bubble around the edges and coats the back of a spoon. Do not allow to come to a boil. Remove from heat and pour chocolate into mixture. Let sit for 5 minutes, then gently stir until chocolate is completely melted and mixture is smooth. Pour into pretty glasses or espresso cups and chill in fridge for 6-8 hours (or overnight) before serving.. Top with whipped cream of coconut (found in the alcohol mixers aisle of the grocery) and chill until serving.
