1 cup sugar
2/3 cup flour
3 eggs
1/2 tsp baking soda
1 tsp cinnamon
2/3 cup pumpkin
Confectioners' sugar for dusting top
Filling:
1 cup confectioners' sugar, sifted
8 ounce cream cheese
6 tsp butter
1 tsp vanilla
Directions
Mix cake ingredients together and pour into lightly greased and floured wax paper-lined cookie sheet. Bake 15 minutes at 350° F. Remove immediately and place on tea towel that has been slightly dusted with confectioners' sugar. Roll up until cool. Meanwhile mix filling ingredients. Unroll and spread with filling and roll up again. Refrigerate several hours to set. May be frozen. Before serving, dust completed pumpkin roll lightly with confectioners' sugar. Looks lovely on a silver tray.
