Pac Choi Salad

FEATURING: Pac Choi (or bok choi), carrots, sweet pepper, onions, and white turnips (rabiole - optional).
An easy, healthy and beautiful recipe to explore Pac Choi in a new way!
Ingredients You'll Need
GINGER DRESSING
1 inch fresh ginger root peeled and quartered
2 cloves garlic (or 2 garlic scapes), peeled & chopped
2 Tbsp rice vinegar seasoned
1 Tbsp Dijon mustard
1 Tbsp lemon juice
1 tsp tamari or soy sauce
1/4 cup sesame oil
Pinch red pepper flakes
SALAD
1 head Pac Choi (or Bok Choy), sliced in thick 2-3 cm pieces
1/4 onion, peeled and chopped (or 2-5 green onions, chopped)
1 sweet pepper, sliced
1/2 to 1 white turnip (rabiole), cut in julienned or shaved with peeler (optional)
1 carrot, cut in julienned or shaved with peeler
TOPPING (OPTIONAL)
1/4 cup plain roasted peanuts crushed/chopped
Directions
Combine the dressing ingredients in a mason jar or food processor or blender.
Close the mason jar and shake well OR puree until smooth.
Combine the salad ingredients in a large bowl.
Toss together.
Toss in the dressing, or serve it on the side.
Top dressed salad with peanuts or other nuts of choice (optional).
