"A great way to get veggies in any time of day"

Why I Love This Recipe

I made this recipe so it could be cooked ahead and reheated for any meal.


Ingredients You'll Need

3 large Spiralized Carrots (fine)
1 Spiralized Butternut Squash neck (peeled)
1 Spiralized rutabaga (peeled)
4 eggs whisked
2 tsps Tapioca Starch
1 tsp garlic powder
1 tsp harissa powder or paste
1 tsp salt
1/2 tsp pepper
coconut oil spray for waffle iron


Directions

Whisk eggs in a large bowl, add spices and tapioca, whisk well


Add spiralized veggies to egg mixture


Heat waffle iron to higher setting


Spray waffle iron


Fill the waffle iron with veggie/egg mixture


Cook until golden brown


Serve hot with your favorite sauce


Pairs Well With

An over easy egg and sausage
