1/3 c. diced sweet onion
2 Tblsp. chopped fresh parsley
2 Tblsp. grated Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. paprika
4 (1 oz.) slices Swiss cheese
4 boneless, skinless chicken breasts
halves, pounded to 1/8 inch thickness
1/2 c. seasoned dry bread crumbs
2 Tblsp. grated Parmesan cheese
1/3 c. all-purpose flour
2 eggs, lightly beaten
1/2 c. veg. oil
Directions
In a small bowl, combine first 7 ingredients,ending with paprika; mix well and set aside.
Place 1 slice of cheese in center of each chicken breast. top with 1/4 onion mixture. Starting with long edge, tightly roll breast,
folding in ends to seal. Secure with toothpicks. In a small bowl, combine bread crumbs and 2 Tblsp. Parmesan cheese. Dredge each breast in flour. Dip each breast in egg and then in bread crumbs. In a large skillet, heat veg. oil over med. heat. Fry chicken, starting with seam side down, rotating 7-10 min. to avoid overbrowning. Fry 20-30 min. or until golden adn juices run clear. Drain on paper towels.
