Paprika and Coriander Chicken with Chunky Couscous

Why I Love This Recipe
This is a typical kind of meal I’ll cook for myself when I come in from work. Pretty quick and nothing too demanding from a skill point of view.
Ingredients You'll Need
Chicken (This is enough for 2 bits of chicken. One for the meal and one for sandwiches the nex day)
2 Chicken Breasts
1tsp Paprika
½ tsp Ground Coriander
½ tsp Dried Chilli Flakes
Drizzle of Olive Oil
Couscous
50g couscous
1 Spring Onion (sliced)
¼ of an Orange Pepper (chopped)
1 ½ inch piece of Cucumber (sliced and chopped into chunks)
Handful of Cherry Tomatoes (halved)
Pinch of fresh chives
Pinch of fresh parsley
Directions
1. Place the spices and oil in a sandwich/freezer bag. Add the chicken breasts and shake the bag until the chicken is coated. Place in the fridge for 20 minutes to sit. Pre-heat oven to 200C
2. Take the chicken out of the fridge and place in an oven proof dish. Cover with foil and place in the oven for 25 minutes
3. After 25 minutes remove the foil and return to the oven for 10 minutes or until cooked thoroughly. Put the the parsley and chives in with the couscous and cook the couscous as directed on its packaging.
4. When the couscous is ready toss through the veg. Plate up and drizzle a small amount of olive oil over the couscous
