Paradise Chiffon Pie

Why I Love This Recipe
This recipe we found in one of our Hawaiian cookbooks called "Favorite Recipes of Hawaii." After you taste this pie you will understand why it was published in that cookbook.
Ingredients You'll Need
3 ripe bananas
1/3 cup fresh lime juice
1 teaspoon finely grated lime zest
1 cup sugar
4 eggs, seperated
2 envelopes plain gelatin
1/4 cup cold water
1 cup whipping cream
1 9 inch baked pie shell
2/3 cup toasted chopped macadamia nuts
Directions
Mash bananas. Combine bananas, lime juice, lime zest, 1/2 cup of the sugar and egg yolks; mix well and place on top of double boiler. Cook over simmering water until the mixture thickens. Soften gelatin in cold water. Add softened gelatin to banana mixture and stir until dissolved. Remove from heat and chill until partialy set. Add 1/3 cup toasted macadamia nuts and mix well. Beat egg whites until stiff. Gradually add the remaining 1/2 cup of the sugar. Beat cream to firm stiff peak stage, fold into the banana mixture, then fold in the egg whites. Spoon into baked pie shell. Sprinkle top with remaining 1/3 cup of macadamia nuts. Chill for at least 1 hour. Makes 6 servings.
