Why I Love This Recipe

Ingredients You'll Need

2 12-oz packages of frozen corn
⅓ c sugar
¼ c flour
2 T corn meal
6 T Country Crock Original, melted
½ t salt
1½ c milk
4 eggs
2 T chives
1 c shredded parmesan, divided into ½ c


1. preheat oven to 350 degrees

2. in a food processor process one of the 12 oz packages of corn, along with sugar, flour, corn meal, Country Crock, salt, milk and eggs

3. in a large bowl mix in ½ of the Parmesan cheese, second pkg of frozen corn, chives with the corn/flour mixture from the food processor

4. pour into a greased 2 qt casserole dish

5. sprinkle remaining Parmesan cheese

6. bake for 45 to 55 minutes, until firm in the center and golden brown on the top.
