Why I Love This Recipe

Ingredients You'll Need
6 skinless, boneless chicken breasts
1 yellow onion, finely chopped
1 can tomato soup
1/8 tsp garlic powder (I used 2 cloves fresh garlic)
1/2 tsp oregano
1/2 tsp basil (I used about 8 large leaves of fresh basil)
1/4 C Parmasan-Romano cheese
1 C mozzarella cheese
Directions
In a blender (I used the food processor), combine soup, water, onion, and herbs. Blend for 10 seconds on the blend setting. Arrange chicken in a single layer in a baking dish. Pour soup mixture over chicken. Sprinkle with the Parmasan-Romano cheese. Bake at 350° for 45 minutes. Top with shredded or sliced mozzarella and bake 5 minutes longer.
Today is DH's birthday. I let him pick out which recipe he wanted for supper. As you can see this has been in my files for quite awhile.
I was all set for this to have a strong tomato soup taste. Not exactly what I wanted for our supper. But it didn't! It has a nice tomato herb flavor. It's an easy, good chicken dish. I'll make this one again.
