Passion Fruit "macarons"

Ingredients You'll Need
- 1/2 cup egg white
- 3/4 cup of sugar
- 5 drops of yellow coloring
- 1 cup of brazilian nut flour
- 1 cup confectioner’s sugar
- 4 tablespoon of water
- 1 teaspoon white jelly powder, no flavour
- 1 cup passion fruit juice
- 1/3 cup sugar
- 3 eggs
- 1 e 1/2 cup of butter
Directions
In a bowl, mix the egg white and 3/4 cup of sugar. Double boiler and don't stop mixing till it loses viscosity.
Transfer to electric mixer and shake till it gets hard (beaten egg whites). Join the coloring drops. Turn of the mixer and join the brazilian nut flour and the confectioner’s sugar. Put the mix inside a confectioner's bag (hope this is the real name in english!!!).
In a flat cake tin with butter and regular flour, press the bag and form little balls.
Put the tin into the oven (pre heated??) 100º C for ten minutes. Increase the oven to 130º C and bake for another 10 minutes. Take it out, let it cool for 10 minutes and remove the "macarons" from the tin. Let it cool and pressure with the finger the center of the "macarons" (straight side).
In a little bowl, join the water spoons and powder with the jelly. In another bowl, mix the eggs with a manual mixer. In a pan, mix the passion fruit juice and 1/3 cup of sugar and boil. Add the hot juice to the eggs slowly, mixing well.
Pass over the mix to a strainer and take it back to the pan. Boil for another minute. Transfer the mix to a bowl and chop the butter on top of it. While the butter melts, take the jelly to the double boiler.
Pour out the jelly on top of the passion fruit sauce and mix. Take it to the fridge. As soon as its firm, put in another confectioner's baf e drop the stuffing into the "macarons" cavity. Join them in pairs, closing with the stuffing inside.
