Pasta Fagioli {sicilian Style}

Why I Love This Recipe
This is a fav among Sicilian Americans. And so easy to make!!!
This recipe will serve aprox 3 people {my husband and I eat the whole thing between the 2 of us though..depends on how hungry you are!}
Ingredients You'll Need
olive oil
2 cloves garlic, chopped
Two 15 oz cans of tomato sauce {I use Delmonte. DO NOT used crushed, cubed, etc. Just regular sauce}
Salt and pepper
3/4 pound of small square macaroni or elbows
1 LARGE can {24-32 oz} of cannellini beans
Parsley {optional}
Directions
Coat bottom of medium sized pot with olive oil. Saute' garlic until tender and slightly brown. Add the tomato sauce. Lower heat.
Sprinkle with salt and pepper to taste. Cover.
In a large pot, bring water and a pinch of salt to a boil. Add macaroni.
As the macaroni cooks, pour the entire can of cannellini beans into the sauce {including the water the beans are in..this will add flavor}.
Stir and continue to cook on medium or low heat, depending on your stovetop.
Keep covered so the beans do not absorb too much of the sauce.
If you'd like, you can also add a pinch or so of parsley.
Cook macaroni just a bit past al dente.
Strain and return to pot.
Pour the sauce and beans into the macaroni and toss until thoroughly mixed.
Sauce should be loose, but not too watery.
Cover and let sit for a few minutes.
Serve with grated Locatelli cheese.
