A fabulous friend of my mother’s would serve this onion pie during afternoon tea in Buenos Aires, Argentina – a favorite savory treat.

Ingredients You'll Need

1 1/2 lbs onions, thinly sliced and separated
2/3 cups freshly grated sharp white cheese or Parmesan cheese
2 large pie crusts (tapas de pascualina)
1 tablespoon flour
1/2 cup butter


Cover and cook onions in butter over low heat until soft. Remove from heat. Mix in cheese and flour. Put one “tapa” (pie crust) in a large pie pan. Pour the onion mixture into the “tapa” and top with a few slices of “queso fresco” cheese. Cover with the other pie crust. Bake at medium heat (around 350) for 20-30 minutes until the top crust has browned a bit.
