Pastel de Papa (Potato and Ground Beef Pie)

"Essentially an Argentinean take on Shepherd's Pie"

Beef, potato, and egg. Can't go wrong!
Ingredients You'll Need
1 pound ground beef
2 cups onion (red or white, your choice)
1 bunch green onion
1/3 cup jalapeño
1/2 tablespoon cumin
1/2 tablespoon sugar
2/3 cup tomato puree
salt to taste
one container of pre-made mashed potatoes (about 1.5 pounds)
4 hard boiled eggs
Grated parmesan cheese to taste
Chives to garnish
Directions
chop onions and combine in a large pot. At the same time, hard boil your eggs
cook on low/medium heat until they begin to brown, then add jalapeños
once onions are fully browned, add in the beef, and continue to cook on medium heat until fully cooked. Stir occasionally
Mix in cumin, sugar and tomato puree. Stir to combine
Salt to taste, and set aside
Follow instructions on the back of the mashed potatoes container until ready
Preheat oven to 400. Spray your baking tin with cooking spray or oil, and line the bottom with a thin layer of mashed potatoes, just to help hold the pie together when ready
Place the beef on top of the potatoes
Place the eggs in a thin layer on top of beef
Layer the rest of the mashed potatoes evenly on top of the eggs
If desired, sprinkle parmesan cheese on top, and place in oven for about 25 minutes or until top begins to brown
Garnish with chives and enjoy!
