Peaches just holler Grandma! Picking, peeling, canning, making pies, and cobblers. The memories that this recipe evokes are priceless!
Ingredients You'll Need
6 Tbsp butter
5 or 6 fresh ripe peaches, depending on size, blanch & peeled and sliced into thick wedges (or 1-2 cans 28 oz peaches, grandma used her homemade canned peaches mostly, but in a pinch she'd use store-bought. If using fresh peaches you can sprinkle with a few tablespoons of sugar to bring juice out of them.)
1 cup flour
1/2 cup granulated sugar
1 Tbsp granulated sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon, optional
1/2 tsp nutmeg, optional
1 1/2 cups milk
Directions
Adjust oven rack to lower-middle position and heat oven to 375 degrees F. Put butter in 9" X 13" baking dish or pan and place in oven to melt.
Whisk flour, 1/2 cup sugar, baking powder, baking soda, and salt in small bowl. Also mix in spices at this stage if using. Add milk, and stir until just incorporated into dry ingredients.
When butter has melted, remove pan from oven. Spoon batter over melted butter in the pan, DO NOT STIR. Then arrange peaches and peach juices on top while trying not to disturb the batter.
Sprinkle with one tablespoon sugar. Bake until batter browns, about 40 to 50 minutes.
Serve warm with a dollop of ice cream!
