Directions
Preheat oven to 375°F (190°C).
In a medium bowl, combine the sliced peaches, 1/2 cup sugar, and 1/4 teaspoon cinnamon. Stir and set aside for 20 minutes.
In a large mixing bowl, whisk together flour, remaining 1/2 cup sugar, milk, baking powder, salt, and vanilla extract until smooth.
Pour the melted butter into a 9x13-inch baking dish, then pour the batter evenly over the butter. Do not stir.
Spoon the peach mixture and its juices evenly over the batter. The batter will rise around the fruits as it bakes.
Sprinkle the top with coarse sugar and the remaining 1/4 teaspoon cinnamon.
Bake in the preheated oven for 40-45 minutes, or until the cobbler is golden brown and bubbling.
Allow to cool slightly before serving. Enjoy warm with vanilla ice cream or whipped cream, if desired.
