Why I Love This Recipe

Have a peachy time eating this pork loin.


Ingredients You'll Need

1 (3-4 pound) rolled, boneless pork loin roast
2 cups currant jam (red plum)
1 cup peach preserves
50 peach slices for garish


Directions

Preheat oven to 325F


Place pork loin roast in a roaster with rack and cover.


Bake for 60 to 70 minutes or until the meat thermometer reads 160.


Remove roast from pan and slice into 25 equal slices.


Remove rack and return slices to the roaster. Brush slices with currant-peach sauce.


In a saucepan, combine currant jam and peach preserves and melt over medium heat.


Garnish with 2 peach slices per slice of meat.
