Peanut Butter Oatmeal Cookies

Kathy Schillemat made these for our refreshments after "Refresh the Spirit," Spring 2012. Another gluten-free dessert everyone will enjoy.
Ingredients You'll Need
2 cups peanut butter
2 cups sugar
4 large eggs
1-2 cups old-fashioned rolled oats
Chocolate chips, optional
Combine peanut butter, sugar and eggs, mixing thoroughly.
Add oatmeal, and if you wish, the chocolate chips.
Bake at 350 degrees F for 10 minutes. Check them sooner, in case they bake more quickly!
