4 slices bacon, diced
1 small white onion, finely chopped
1 cup strawberries, diced
1/4 cup coffee, brewed and cooled
2 tbsp cider vinegar
2 tbsp brown sugar
1/4 tsp salt
1/4 tsp pepper
1 lb ground beef
4 slices American cheese
4 tbsp creamy peanut butter
2 brioche buns, split
Directions
Prepare the strawberry bacon jam: In a medium skillet, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the grease in the pan.
Add the chopped onion to the pan and sauté until translucent, about 5 minutes.
Add the strawberries, coffee, cider vinegar, brown sugar, salt, and pepper to the skillet. Stir well and bring to a simmer. Cook for about 8–10 minutes until thickened. Remove from heat and let cool.
Form the ground beef into two 1/2-pound patties and season them lightly with salt and pepper.
Heat a griddle or skillet over high heat. Place the patties on the skillet and press down with a spatula to get a crust-seared burger. Cook for 3–4 minutes on each side, placing American cheese slices on top during the last minute of cooking.
Toast the brioche buns lightly in the same skillet or on the grill.
Spread 1 tablespoon of peanut butter on the bottom half of each toasted bun. Place the burger patty with cheese on top of the peanut butter.
Top each burger with a generous layer of strawberry bacon jam and place the top bun on.
Serve warm with a side of your choice.
