Why I Love This Recipe

I found this recipe online but made a number of changes to it because it was too tart/bitter without the cream.

Ingredients You'll Need

4 pears
4-1/2 cups strong Earl Grey tea
juice of 3 limes
1 cup sugar
1 cup cream
vanilla ice cream


Prepare 4 cups of earl grey tea. After letting it seep, boil the tea down to 1.5 cups. Put tea in fridge overnight.

The next day: peel the pears, cut them in half and core them. In a large saucepan, bring the tea, lime juice and sugar to a boil, stirring to dissolve the sugar.

Add the pears and poach for about 10 minutes.

Remove the pears and allow to cool.

Continue to boil the poaching liquid until it has the consistency of syrup. Remove from stove and allow to cool.

To serve:

Divide the pears among 4 plates, spoon some of the syrup over them. Pour 1/8-1/4 of cup of heavy cream over each to mellow the syrup.

Garnish each with a scoop of vanilla ice cream and serve
