Why I Love This Recipe
Our family has about 5-6 favorite Christmas cookie recipes that we enjoy every Christmas. This was my late husband, Jerry's favorite.
Ingredients You'll Need
1 c. butter
1/2 c. confectioner's sugar
1 t. vanilla
2 1/4 c. GGFG Baking Mix
2 t. zanthum gum
1/2 t. salt
3/4 c. chopped pecans (or nut of choice)
Confectioner's sugar to roll cookies in after baking
In bowl of mixer, cream butter, confectioner's sugar, and vanilla. Turn off mixer and add GGFG baking mix, zanthum gum, and salt; stirring by hand to moisten. Add nuts, then turn mixer on and mix until mixture is well mixed. Refrigerate an hour or so. Then roll into 1" balls and place on ungreased baking sheet. Bake in an oven preheated to 350 F for 10-12 minutes until very lightly browned. Remove from oven and roll warm cookies in confectioner's sugar. Roll again when cooled. Freezes well.
