Peppers and Egg Sandwhiches
Why I Love This Recipe
This recipe is very special to me because of all the wonderful memories it brings to mind from when I was a child. My mom use to make this for us and although is is a very simple recipe it is most enjoyable.
Ingredients You'll Need
two green peppers ( diced seeds removed )
two tablespoons of olive oil
1/4 cup of fresh grated parmasian cheese
salt and pepper to taste.
three torpedo rolls ( approx 6 inches )
Saute the green pepper in the olive oil over medium heat until tender.
Mix eggs, salt, pepper and parmasian cheese together in a bowl.
Add the egg mixture to the peppers and cook until done.
Slice the rolls and butter both sides.
Place the egg and peppers on the rolls and enjoy.
