Why I Love This Recipe

First and foremost to me this dish means family. It was something my Grandmother and Mom used to make. It’s an easy recipe and very delicious!!!!

Ingredients You'll Need

3-4 Chicken breasts
6-8 Tbsp prepared pesto
1 cup fresh spinach leaves
2 roma tomatoes, roughly chopped
1 can marinated artichoke hearts, drained and quartered
6 oz. mozzarella
Choice of penne noodles or rice


Preheat oven to 375F.

Place chicken in a baking dish and spread 1-2 tbsp. of pesto on each chicken breast.

Place spinach on top in layers, then add artichokes and tomatoes.

Cover with cheese.

Bake uncovered for 30-45 minutes or until the chicken is cooked all of the way through.

Serve over rice or noodles
