Pickled Radish With Meyer Lemon Juice
Why I Love This Recipe
Some people who don't even like radishes love them prepared this way. This recipe was submitted by Esther Steele, Garden Educator at Mira Vista School.
Ingredients You'll Need
15-20 red radishes
1 cup of Meyer lemon juice (or regular lemon juice)
1/2 bunch of cilantro copped
1/2 cup red onion chopped
1/2 jalapeño chopped
Salt to taste
1. Slice radish into thin slices. Then place in a bowl with lemon Juice.
2. Add in chopped cilantro, onion, jalapeño, and salt
3. Mix all ingredients together, then cover and place in the refrigerator for 30 minutes.
