Ingredients You'll Need

1 (18.25 oz) package yellow cake mix
1 (11 oz) can mandarin oranges, juice reserved
4 eggs
1 cup apple sauce
1 (16 oz) package frozen whipped topping, thawed
1 (15 oz) can crushed pineapple, drained
1 (3.5 oz) package instant vanilla pudding mix
1 can mandarin oranges for decoration on top


Mix together cake mix, try zest instead of adding oranges and use orage juice <2/3 cup (little less than) (or use mandarine juice and 1 tsp orange extract), eggs, and oil. Pour batter into 13x9 pan greased and floured. Mix about 3 min on med.

Bake at 350 degrees F for 35-40 minutes, or until cake tests done. Cool layers on wire racks.

Mix together, drained pineapple, instant pudding mix, and fold in whipped topping. Fill and frost the cooled cake. Refrigerate until ready to eat. Do not let cool whip come to room temp, it will run. Make sure cake is cool before adding topping.
