Pineapple Au Gratin

Why I Love This Recipe
I belong to a yahoo recipe sharing group, although the group has fizzled out this is an example of the good recipes that I recieved.
The original person who posted this said this is an excellent side dish to serve with ham.
(I think it's so sweet it almost doubles as a dessert!)
Side note from Origonater of Recipe ~ I've cooked this at all different temperatures, up to 400 degrees, when I had other things in the oven. Just adjust the time accordingly. Doubles and keeps well in fridge.
Ingredients You'll Need
1 (20oz.) can pineapple chunks
1/2 C sugar
2 T flour
1 egg
1 C cheddar cheese shreds

1 (20oz.) can pineapple chunks
1/2 C sugar
2 T flour
1 egg
1 C cheddar cheese shreds
Drain pineapple, reserving juice. Beat egg in medium sauce pan, add sugar and flour to form paste. Blend in pineapple juice and stir over medium heat until thick. Remove from heat. Stir in cheese and pineapple chunks. Pour into greased 1 1/2 qt. casserole dish. Bake, uncovered, at 325 for 45 minutes or until hot throughout. Serve warm.
