Pineapple Chicken Stir Fry

Ingredients You'll Need
¼ cup soy sauce
2 tablespoons sugar
1½ tablespoons cornstarch
1 tablespoon cider vinegar
½ cup chicken broth
1 tablespoon ketchup
½ teaspoon ground ginger
2 garlic cloves, minced
1 pound boneless skinless chicken breasts, cut into strips
2 tablespoons vegetable oil
1 (16-ounce) package frozen stir-fry vegetables
1 (8-ounce) can pineapple chunks, drained (reserve juice for sauce)
1 can sliced mushrooms
Directions
1. In a small bowl, combine first eight ingredients and reserved pineapple juice; set aside.
2. In a skillet, stir-fry chicken in oil for 5 to 6 minutes. Add vegetables; stir-fry 3 to 4 minutes. Stir in pineapple chunks, mushrooms, and soy sauce mixture; heat through, stirring until thickened.
3. Serve over rice.
