Pineapple fluff is an easy, tasty springtime dessert.
Ingredients You'll Need
small box of instant vanilla pudding
20 oz. crushed pineapple with juice (do not drain)
1 c. whipping cream
1/4 c. sugar
2 c. miniature marshmallows
1 c. shredded sweetened coconut
1/2 c. pecans, chopped
Whip cream in stand mixer, when cream begins to thicken add sugar and beat until stiff peaks form. Set aside. In a large bowl mix together crushed pineapple with its juice and vanilla pudding. When well mixed, fold in whipped cream, marshmallows, coconut, and pecans. Pour into pretty glasses and refrigerate at least 2 hours before serving. May top with additional whipped cream and a cherry, if desired.
