1 pound boneless pork loin cut into thin, narrow strips
3 cloves garlic, minced
1 teaspoon ground ginger
1 onion cut into wedges
2 carrots cut into thin slivers
1 red pepper cut into small pieces
1 green pepper cut into small pieces
2 cups snow peas
Directions
1. In a saucepan, combine reserved pineapple juice, water, soy sauce, brown sugar, cornstarch, vinegar, and pepper flakes; bring to a slow boil over medium heat, blending until smooth then set aside.
2. In a skillet, brown pork strips in oil. Add garlic, ginger, onions, and carrots; cook 3 to 4 minutes. Add red and green peppers, snow peas, and pineapple; cook 2 to 3 minutes. Add sauce and cook until thickened.
3. Serve over rice
