Pistachio Crusted Salmon

Why I Love This Recipe

I found a recipe on a website and then I revised it. It was the best salmon I've ever had!


Ingredients You'll Need

2-4 salmon fillets
2 tbls of water
2 tbls of soy sauce
1 tbls fresh grated ginger root
1 minced garlic clove
2 tsp sesame oil
1/4 cup crushed pistachios
2 tsp light parmesan cheese
1 tsp parsley


Directions

marinade salmon fillets in soy sauce, water, ginger, garlic and sesame oil for 30 ins. Spray baking sheet. Place salmon fillets on and brush generously with marinade. then sprinkle on pistachio, covering upside. sprinkle a little Parmesan cheese on top of fillets then sprinkle small amount of parsley for color. Bake at 350 F for 20 mins.

Wow! I made this last night and it really was excellent! I subbed crushed ginger from a jar for grated ginger and left the chunks of garlic on the fish underneath the crushed pistachios. I'll definitely be making this again, and am thinking of doing the same thing with flattened chicken breasts.
