Why I Love This Recipe

Ingredients You'll Need

Salmon Fillet (1 pound)*
1/3 Cup Pistachios, Finely Chopped (roasted and salted is fine)
1/4 Cup Panko (Japanese bread crumbs)
1/4 Cup Grated Parmesan Cheese
1/2 Teaspoon Kosher Salt
1/4 Teaspoon Ground Black Pepper
*When choosing the fish, use the flatter end pieces rather than the thicker center cut. It's easier to keep the coating on the fish.


Directions

Preheat oven to 400°F.


Toss pistachios with panko and cheese.


Place salmon on a greased, foil-lined 15x10x1 inch pan skin side down (or use non-stick foil).


Sprinkle with salt and pepper.


Top with pistachio mixture, pressing to adhere.


Bake, uncovered, until fish begins to flake easily with a fork, 15-20 minutes.


Pairs Well With

Roasted or Steamed Vegetables, Salad.
