Why I Love This Recipe

This version uses BBQ chicken, but as pizza goes, you can use any sauce and toppings of choice. Try pesto, alfredo, or marinara sauces with any variety of toppings


Ingredients You'll Need

1 lb Boneless Skinless Chicken Breasts
6 Pita Flat Breads, Not The Ones That Are Cut In Half
1/2 cup Your Favorite BBQ Sauce
1/2 Onion
2 cup Shredded Mozzarella Cheese
2 Tbsp Vegetable Oil
1 Tbsp Dried Cilantro
1 Tbsp Olive Oil
1 Garlic Clove


Directions

*Preheat oven to 400; Thinly slice onion and chop chicken into bite size pieces


*In a bowl, coat the chicken with 1/4 cup BBQ sauce; heat skillet on med-high heat; add oil and coat the pan


Oven Temperature: 400°F


*Sauté chicken in oil until cooked through (or use leftover cooked chicken and skip this part)


*Sprinkle underneath each pita with olive oil and use a clove of garlic to spread oil over pita; flip over and spread BBQ sauce on each; use a brush to be sure the sauce covers each one entirely


*Divide cheese among pitas; top with chicken, then onions and sprinkle again with cheese


*Bake pizzas 10 minutes, or until cheese is melted; top with cilantro, if desired
