Why I Love This Recipe

These are an Italian cookie done in a waffle iron sort of thing. They originally were heated on a stove, the batter put in and kept hot over the stove until the pizzelle was crisp and lightly browned. Now you can get electric irons.

Ingredients You'll Need

5 extra lg. eggs
3 1/2 cup flour
1 3/4 cup sugar
1 cup margarine
4 tsp. baking powder
1 Tbsp. orange extract
1 tsp. lemon extract
1 tsp. vanilla
1 cup walnuts or pecans, chopped fine

Beat eggs, adding sugar gradually.

Beat until smooth.

Add cooled melted margarine and extracts.

Sift flour and baking powder and add to egg mixture.

Dough will be sticky enough to be dropped by spoon onto heated iron.

You can also use anise (2 Tbsp.) flavour and chocolate and others.
