Plain Shortbread

I created this recipe to take the sugar out of my diet, but keep a taste of my childhood.
You can dip the shortbread in chocolate either completely or half way, you can even layer the chocolate on it if you'd like.
There are lots of additions you can add to this recipe, Chopped Dried Cranberries with Crushed Red Chilis, Chopped Raisins soaked in Bacardi Spiced Rum, Orange Oil with Dried Orange Peel, Lemon Oil with Dried Lemon Peel and Poppy Seeds are just a few.
Experiment all you'd like, the dough is a base to work from and play
Ingredients You'll Need
3 Cups Plain All Purpose Flour
3 Sticks of Salted Butter Softened but not too soft
1 tsp of Stevia
Heat Oven to 350*F / 180*C
Directions
Sieve Flour and Stevia into a clean bowl, large enough to allow you to rub the butter in without spilling it over the sides
Cut the butter into the dry ingredients
Start rubbing the Butter into the Flour Mix till you get breadcrumb texture
Continue to rub butter into the Mixture until it forms a firm but soft dough, be careful not to overwork at this stage.
Cover and let dough rest for 30 minutes, not necessary to put in fridge unless the temperature is very hot.
Roll the Dough to about 1/4 inch thick
Cut the dough with a Cookie cutter about 5 cm in diameter, you can re roll the dough to about 1/4 in thick after cutting the first discs
As you cut the Discs place on a parchment covered baking sheet
After you have rolled and cut all the discs place the tray in the oven and cook till golden brown and set.
They Should feel dry to the touch
Let cool for a few minutes on the tray, then transfer to a wire rack to cool completely
Pairs Well With
You can serve it on its own, With a cup of tea or coffee or even with hot chocolate
