olive oil
one can of red pimento
one can of tomato sauce
olives
2 cups of chicken broth
cumin
oregano
pound of chicken thighs
Directions
Sauté onions with olive oil.
Add pimento, tomato sauce, olives, broth, cumin, and oregano to pot.
Add chicken and cook on low for an hour.
Serve over white rice and enjoy.
