Polly's Biscuits

Why I Love This Recipe
This is my Mom's famous biscuit recipe.....for years, she just mixed things together and great biscuits appeared as if by magic! We finally got her to slow down and measured all of her ingredients! This is a wonderful "short" biscuit. Enjoy! Patti Hatcher
Ingredients You'll Need
4C All purpose flour
2T Baking powder
1tsp Heaping teaspoon of salt
1C Vegetable oil
1 1/2C Milk (whole or 2%)
Directions
Preheat oven to 425F
Mix dry ingredients in a bowl.
Stir in liquids and mix until dry and wet ingredients are incorporated. Dough will be moist and sticky.
Turn out onto well-floured board. Sprinkle top of dough with 2-3T of flour.
Gently pat the dough down to 1 inch thickness, then fold in half. Pat it down again to 1 inch thickness. Repeat this process 2 more times, each times pressing the dough down gently. (Do not knead the dough. Patting it gently into 1 inch thickness and repeatedly folding it over creates flaky layers in the biscuits).
Lightly oil a cast iron skillet or metal baking dish.
Cut dough into circles with a floured cutter or drinking glass.
Bake 13-15 minutes or until discuits are brown on the edges.
Serve with gravy or jelly.
Yield: 2 Dozen
