"What to do with all that leftover turkey"

Why I Love This Recipe

Kathy Brooks introduced us to the wonderful world of the pileup. What a fun way to gather!


Ingredients You'll Need

Cooked, de-boned chicken or turkey, shredded (save chicken or turkey stock)
1 10-oz can cream of chicken soup
1 10-oz can cream of celery soup
6 servings cooked rice
2 cubes (or 2 tsp) Chicken bouillon
Garnish:
1/4 cup sliced almonds
1/2 cup shredded unsweetened coconut
1 5-oz container Chow Mein noodles
1 8-oz can crushed pineapple, drained
1 green onion, chopped
1 medium stalk celery, sliced
Soy sauce
1 cup shredded cheddar cheese


Directions

Cook rice while preparing chicken mixture.


Combine 2 cups of chicken or turkey stock, chicken bouillon, cream of chicken and celery soups until well mixed. Add shredded chicken or turkey. Simmer for 15 minutes.


Serve chicken mixture over rice in bowls.


Set garnishes in separate bowls where individuals can serve themselves.
