Why I Love This Recipe

I chose this recipe, first, because it was given to me by one of my best friends and it reminds me of her every time I make it. ❤️

Second, it is a delicious and simple recipe that requires few ingredients. Also, this is a recipe that kids could help assemble by measuring and mixing ingredients, and layering in the casserole dish.

Ingredients You'll Need

3 chicken breasts (cooked and diced)
2 c. sliced mushrooms (1 package)
½ c. (4 oz.) evaporated milk (regular or skim milk)
½ c. (4oz.) mayonnaise (regular or reduced fat)
1 c. sour cream (regular or reduced fat)
1 roll Ritz Crackers (crushed)
6 Tbsp Butter (melted)
2 Tbsp Poppy Seeds


Topping: In a separate bowl mix the 6 Tbsp melted butter with crushed Ritz Crackers and 2 Tbsp poppy seeds.

Using a casserole dish, place the diced chicken on the bottom of the dish.

Mix sour cream, mayo, and evaporated milk in a separate bowl.
Add sliced mushrooms to the cream, mayo, milk bowl and mix together.

Layer the mushroom mix on top of the diced chicken

Add the topping over the mushroom layer.

Bake at 350 degrees for 40 minutes (or until bubbling).

Serve over pasta (either angel hair or spaghetti pasta, but any will work)
