Why I Love This Recipe

This recipe was given to us by one of our friends when we lived in Michigan more than thirty years ago.

Ingredients You'll Need

4 ounces poppy seeds
2 cups buttermilk
2 cups butter
3 cups light brown sugar
8 egg yolks
5 cups flour
2 teaspoons baking soda
1 teaspoon salt
4 teaspoons baking powder
8 egg whites
2 teaspoons almond extract
1 cup light brown sugar
2 teaspoons cinnamon

Soak poppy seeds in buttermilk for two hours.

Cream butter and sugar until fluffy; add egg yolks and beat well.

Sift together flour, soda, salt and baking powder.

Add this mixture to the poppy seed mixture; add almond extract.

Gently fold in stiffly beaten egg whites.

Pour half of batter in 12 x 19 inch baking pan.

Mix 1 cup light brown sugar with cinnamon, sprinkle half of this mixture over half of batter in pan.

Add remaining batter, than sprinkle the remaining sugar & cinnamon mixture.

Bake at 350ºF for one hour.
