Pork Chops with Orange-Dijon Sauce - Slow Cooker

Babette here is another reason for you to purchase a Crockpot :) It is a simple but very tasty dish.
This recipe we found in the Better Holmes and Gardens Slow Cooker Cookbook.
Ingredients You'll Need
6 boneless pork sirloin chops, cut 1 inch thick
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme
1 1/2 cup orange marmalade
1/3 cup Dijon mustard
Directions
Sprinkle both sides of chops with salt and pepper, then sprinkle chops with thyme. Place chops in a 4 quart slow cooker. In a bowl combine marmalade and mustard. Remove 4 tablespoons of the mixture, cover and refrigerate. Add 1/4 cup water to the rest of the marmalade mixture and pour over the pork chops.
Cover and cook on low heat setting for 6 1/2 hours or on high heat setting for 3 1/2 hours. Transfer pork chops to serving platter; discard cooking liquid. Spread reserved marmalade mixture over pork chops. Serve with brown rice pilaf and steamed vegetables.
