Pork Loin Pulled Pork

Pulled pork sandwiches on gluten free buns topped with fresh coleslaw is such a wonderful summertime meal to eat outdoors and enjoy the day.
Ingredients You'll Need
2 lb. pork loin roast
1/2 c. BBQ rub, homemade or store bought
Directions
Using a large roasting pan, place pork loin in pan and rub all over well with BBQ rub. Turn fat side up. Roast in an oven preheated to 225F for 5 hours if using a gas oven. If you have an electric oven, cook for 5 hours, then add 1/4 c. water to bottom of the pan and cook an additional hour. Once pork loin has reached 200F using an oven safe thermometer or an instant read thermometer, turn off oven but let pork loin roast remain in the oven for another hour. (The cooking time is 2 1/2 hours per lb. so adjust the time accordingly if your roast is a different size.) After the oven resting time, use two forks to pull the meat apart into chunks, and be sure to mix in pan juices for flavor. Serve with BBQ sauce if desired.
