Pork Loin Roast with Mangoes

Why I Love This Recipe
This is an especially good dish to serve when you have relatives and/or friends over for dinner.
Ingredients You'll Need
5 to 6 pounds pork loin roast
1/2 teaspoon salt
1/2 teaspoon pepper
1 medium onion, chopped
4 cloves garlic, minced
1 tablespoon olive oil
1/3 cup raspberry or Balsamic vinegar
3 cups sliced firm ripe mangoes
Directions
Preheat oven to 350ºF. Place the pork in a shallow baking pan on a rack. Season meat with salt and pepper and place roast in the center of rack fat side up. Roast for 1½ hours.
In a medium bowl place sliced mangoes and pour vinegar over mango slices; set aside.
Sauté onions and garlic in oil until onion is soft; set aside.
Remove the pork from the baking pan and place on an ovenproof dish.
Cover pork with onion and garlic, then pour the mangoes and vinegar over the roast and return it to the oven. Roast for 30 minutes more or until meat thermometer registers 165ºF. Remove meat from oven and allow to rest for 20 minutes. Slice meat and present on a warmed platter. Spoon the extra sauce over the pork.
