Pot Roast with Vegtables

Ingredients You'll Need
2 Tbs. olive oil
4 pds. first cut beef brisket
2 cups peeled and chopped onions
1 Tbs. peeled, chopped garlic about three cloves
1/2 cup dry white wine (optional)
2 cups water
1 bay leaf
1/4 tsp. dried thyme
salt/pepper to taste
4 lg Idaho potatoes, washed,peeled and cubed
3 lg carrots, scraped and sliced
3 tbs. chopped fresh parsley
Directions
Heat the oil in a crockpot. Add the brisket. Add vegatbles, liquids and seasonings to pot and set on high for 8 hours.
