Potato-Bacon Casserole

Ingredients You'll Need
1 1/2 qts. cubed peeled raw potatoes (about 6 med.)
3 eggs
1 1/2 tsp. salt
1/4 tsp. coarse grind pepper
1 small onion, sliced, or 2 green onions
1/4 c. firmly packed parsley sprigs or 2 tsp. parsley flakes
2 Tb. flour
1 tsp. baking powder
1/4 c. milk
6 slices bacon, cut in 1" pieces
Directions
Place 3 c. potatoes in blender; add enough water nearly to cover, about 1 c. Blend at grate speed about 1 min; work potato pieces down and around the side above area of the blades. Potato pieces not grated finely enough can be grated with remaining potatoes. Empty grated potatoes immediately into a colander over a bowl to save potato water.
Grate remaining potatoes in water (re-use the water saved from the first grating, adding more as necessary). Again drain grated potatoes; let stand. (Potato starch will settle in bowl; this can be use din final combination.)
Place remaining ingredients, except bacon, in blender and process at chop, them mix speeds.
Measure 1/2 c. potato water; add to ingredients in blender. Pour off any remaining potato water, leaving potato starch in bowl. Add grated potatoes and other blended ingredients to bowl.
Lay half of bacon pieces in bottom of 2 qt. casserole. Add potato mixture; top with remaining bacon pieces. Bake in 350º oven 11 hour, keeping casserole covered the first 20 min.
