Ingredients You'll Need
3/4 c potatoes -- mashed/cold
4 c powdered sugar -- sifted
4 c coconut -- chopped
1 1/2 tsps vanilla
1/2 tsp salt
4 squares baking chocolate -- melted
In a mixing bowl, combine potatoes, sugar, coconut, vanilla, and salt until blended. Press into one large or two small pans, so candy will be 1/2" thick. Melt chocolate in double boiler. Pour melted chocolate on top of candy, cool, and cut into squares.
