Potato Cheese Soup

Why I Love This Recipe
A Family Favorite "Not sure to put this under soup or main meal...this is great to make more or less to cater to size of gathering. Since Marissa was 3 years old, it has been ‘Birthday Soup’ and at nearly all her birthday dinners. It has evolved from just a birthday meal and is served at many family gatherings now. It has become a favorite to many and I think at this point requested at one point or another by almost all of our kids. Ingredients You'll Need
5 lb Potatoes, Peeled & Diced
4 cup Shredded Cheddar Cheese
Water
Directions
*Boil potatoes in water until soft; Drain most of the water, but leave a little at the bottom (if you drain too much and potatoes are too dry you can always add water to the potatoes later)
*Pour potatoes in crockpot and slowly add cheese while stirring and add more or less as desired
*Keep crockpot on warm and stir occasionally
Recipe Tips
*You can just put all ingredients in the crockpot rather than pre-cooking the potatoes...about 2-4 cups of water and then wait to add cheese until potatoes are done...add more water or drain if necessary before adding cheese
