Potato Salad

Ingredients You'll Need
4 cups potatoes, cooked and cubed
4 eggs, hardboiled and chopped
1/2 cup celery, chopped fine
1 medium sweet onion, chopped
1/2 cup sweet pickles, chopped
1/2 cup carrots, shredded
Dressing:
1-1/2 cups mayo
1 Tbsp vinegar
1 Tbsp mustard
1 Tbsp sugar
3 Tbsp sweet pickle juice
1 Tbsp celery seed
1-1/2 tsp salt
1/2 tsp pepper
Directions
Boil potatoes in salted wanter with skins on. When tender, cool in refrigerator before peeling and cutting into small, bite-sized pieces.
Toss first 6 ingredients lightly in bowl. In another bowl, mix dressing ingredients and pour over the salad. Very gently, fold into salad. Chill in refrigerator until serving time.
