"Soothing, quick and versatile: a great weeknight dessert"

Serves ~1 cup | Prep Time 5 minutes | Cook Time 10 minutes

Why I Love This Recipe

This is a delicious quick dessert that's relatively healthy and has many accompaniments. Especially good for kids who don't eat fruit very readily--some custard is likely to make the cut fruit more palatable.

Ingredients You'll Need

1 cup whole milk
1 egg yolk
1 tsp cornstarch
1 tbsp sugar (you can add more for a sweeter custard)
1 tsp vanilla essence

Mix together the sugar, egg yolk and cornstarch and set aside

Heat the milk and vanilla essence on a low-medium heat until it's steaming (NOT boiling)

Take a couple tablespoons of the milk and mix it in with the egg yolk mixture to temper it (avoid it from scrambling)

Add the tempered egg yolk mixture to the steaming milk and stir constantly until thickened to your liking (minimally, let it thicken until it coats the back of a spoon). It will thicken a little more in the residual heat so keep that in mind when turning off the heat.

To store: Move it to a bowl and cover it with foil or plastic wrap (make sure the cover touches the top of the custard to avoid the custard from forming a skin). Once it's cool, move it to the fridge.

Pairs Well With

Fruit, on the side of pudding or cake, alongside jello
