Prize-Winning Rhubarb-Pecan Muffins

Why I Love This Recipe
I have never liked rhubard but when i tried this muffins, it was soooo good.

Ingredients You'll Need
2 cups all purpose flour
3/4 cup granulated sugar
1 1/2 tsps baking powder
1/2 tsp baking soda
1 tsp salt
3/4 c chopped pecans
1 large egg
1/4 cup vegetable oil
2 tsps grated orange zest
3/4 cup orange juice
1 1/4 cups finely chopped rhubarb
Directions
In a large bowl, combine flour, sugar, baking powder, baking soda, salt and nuts. In a medium bowl, beat egg. Add oil, orange zest and juice. Add to flour all at once and stir just until batter is moist. Stir im rhubarb.
Spoon batter into greased muffin pans, filling three-quarters full. Bake at 350 F for 25-20 mins. Make 12 muffins
